Apricot Chutney 1 c. white sugar
1 c. brown sugar
1 c. cider vinegar
1 Tbsp. finely chopped ginger or 3/4 tsp. ground ginger
1 tsp. dry mustard
1 dash dried cloves
1 small lime -- chopped
3 small dried hot chili peppers -- crushed
1/2 c. chopped onion
1 small garlic -- mashed
1 c. raisins
4 lb. apricots -- pitted and quartered
1 tsp. ground allspice
Combine all ingredients except apricots in large pot;
bring to a boil, then add apricots. Return to boil. Simmer 45
minutes or until slightly thickened stirring frequently to
prevent sticking. Put up in hot sterilized jars and process 10
minutes in boiling water bath. Yields 4 pints.
